The Best Zucchini Relish

This is the best relish you will ever eat. 
It is a sweet zucchini relish. 
Not like the sweet relish you buy in the stores where it is overly sweet.
It's just the right amount of sweet!

My mom was making this relish since I was a child. 
I have always loved it. 
When I moved out, she would always supply me with this Yumminess. 
Clear into my married life, lol. 
Such a sweet woman. 
When she passed away two years ago, I wasn't sure what I would do. 
I had never made this before.
I had never canned before.
BUT, my mom left us the recipe.

Yes, we were spoiled, lol.

So I decided I could make it myself. 
It took me a whole year to talk myself into making it. 
And you know what? I DID IT!
Just like mom did, thanks Mom, you were the best!

If you like sweet relish but not the overly sweetness that the store sells. 
This is a must-try!!

It is not made with cucumbers but with zucchini.

Here is the recipe if you would like to make it:
This is from my Mom's recipe, Enjoy!!

Zucchini Squash Relish  (makes 6 pints)

10  cups zucchini red bell peppers
green bell peppers 
cups onion
jalapenos (optional)
(I did not use the Jalapenos)

Grind all ingredients together and mix well.

Sprinkle 5 Tablespoons salt over the mixture - DO NOT STIR IN.  Leave overnight in the refrigerator.

Rinse (using colander) with cold water and drain very good.  

Add the following ingredients

½  teaspoon pepper 
1 teaspoon turmeric
1 teaspoon celery seed 
Tablespoon cornstarch
2 ½   cups vinegar 
4 ½  cups sugar

Cook all this over medium heat until starts a slow boil.  Continue cooking 20-30 minutes.

Pack into hot jars (pints) and put in a boiling water bath for 10 minutes.

Can add dill seed or powder, jalapenos, chili pepper, pepper 
flakes or whatever…

We normally double this recipe and cook in our big roaster.

  6. This looks really good and what a sweet memory of your mom too. I've never had relish with zucchini but it sounds fantastic. Especially when my zucchini plant is cranking out more than I know what to do with :).
